Stax and I are doing this thing. It’s kinda new and hip so I wouldn’t blame you if you hadn’t heard of it.
It’s called “eating healthy”.
What you do, is eat foods that are generally less likely to kill you than other foods. So instead of things like hamburgers or three Chipotle Burritos in one day, you eat spinach and fish and other green things.
Oh, and yes, I did once eat 3 Chipotle Burritos in a single day (two in one sitting) and while I am disgusted at myself, I am also incredibly proud of that feat. Come at me, Adam Richman.
Eating healthy can be hard, and in most cases, people equate healthy foods with bland lumps of quinoa burgers and kale chips.
What if I told you, you didn’t have to hate your mouth every time you ate something healthy!
You’ll be seeing a lot but here’s my quick healthy chicken “Florentine”.
First, butterfly your chicken breasts. You could also slice it in half width wise to get more yield from your poultry.
I did. Hungry mouths to feed at the Garcias’.
Now, we bread. Get yourself three bowls, flour, eggs (beaten), and breadcrumbs (seasoned).
You can either buy the last one or make your own.
To bread, first, cover your breast in flour (teehee) then with egg and then with your breadcrumbs.
The flour clings to the chicken, the eggs to the flour and the breadcrumbs to the egg. This gives the chicken a nice crust that won’t pull away from the meat when you cook it.
Heat your fry pan and place a thin layer of olive oil (or coconut if you’re watching the fat) and brown your chicken.
Until it looks like this…
You should see this color after about 3-4 minutes on high heat (on each side). You can also bake your chicken if you want to cut out the oil entirely.
Now, take the chicken out of the pan and put your spinach in there. Salt, pepper, and a pinch of chili flakes makes for some tasty ass greens.
Cook it until the spinach is wilted completely and remove it from the pan.
The next bit happens a little quick so stay with me. Pour your tomato sauce into the pan and snuggle your breasts right up in that gravy. Simmer for a few minutes and place the spinach on top with a sprinkle of parmesan cheese.
Once the cheese melts completely, you’re ready to go! I served mine with a side of steamed broccoli. Fed three people and had lunch for the next day!
This was pretty damn tasty and I recommend it for anyone looking to inject a little green into your life without making a smoothie out of kale and your tears.

Two chicken breasts
4 cups of uncooked spinach
1 jar of tomato sauce (Sockarooni by Mr. Newman is my favorite)
2 cups flour
3 cups bread crumbs (buy Italian seasoning for best results)
