Mess Hall Diaries: Pan Seared Salmon
In an effort to healthy-up our lives Stax and I decided to buy some salmon. In fact, we didn’t just decide to buy the salmon…we also decided to eat the salmon.
I enjoy writing the word salmon almost as much as I enjoy eating it.
Salmon.
This was an easy fast dish to make after work, all in all, it took me about 45 minutes including prep and defrosting…so no excuses.
We bought a pretty large salmon and portioned it out into a few dinners, bagged em and froze em. No need to make a bunch of salmon all at once and it makes going to Costco worth it…almost.
Green Beans:
Start your pan with a little oil and your sliced garlic. Toss in some red pepper flakes if ya nasty and let simmer until your house smells like happiness. Then toss in your beans.
I like to put the juice of one of my lemons in before the green beans and then use the other lemon as a flavor adjuster.

Slice your tomatoes and toss them in right before you’re finished with the dish. This will keep them from getting too hot and breaking down. But if you like them that way, then toss them in a bit earlier.
I think they’re prettier this way.
The Salmon:
he Salmon:
If you thought the green beans were easy, then WATCH OUT…because this is actually a really easy recipe.
On medium heat, melt the butter into your oil and combine. Salt and pepper both sides of your fish and add any other spices you might like. I used Herbes De’ Provence because I’m fancy and I like the shape of the bottle.

Anyways…place thinly sliced lemon over top, and cover till cooked!
Wall Ahhhhhhh
Yeah…that’s it…I told you it was easy.
I hope you enjoy it! Stacey says the beans were pretty amazing…and she’s my wife…so you know that she’s being honest!
